<p>Balıkçınızdan uskumru almak istediğinizde karşılaşabileceğiniz 3 farklı tür mevcuttur. Aralarındaki farkı anlayabilmek için <a href="https://baliktarifi.com/yerli-uskumru-ithal-uskumru-ve-kolyoz-ucgeni" target="_blank" rel="noopener noreferrer"><strong>Yerli Uskumru, İthal Uskumru ve Kolyoz Üçgeni?</strong></a> başlıklı yazımızı incelemenizi tavsiye ederim.  Yerli uskumru bunlar arasında en lezzetlisi olup maalesef denizlerimizde artık azaldığı için pahalı balıklar sınıfına girmiştir. Bunun yerine uskumruya çok benzeyen kolyoz tezgahlarda yerli uskumru diye satılmaktadır. Lezzet olarak gayet hoş olsa da yerli uskumru ile arasında fark vardır. Bir de Norveç&#8217;ten ithal edilen dondurulmuş uskumruyu bulabilirsiniz. Bu diğerlerine göre daha yağlı olup yine lezzetli bir balıktır.</p>

<p>Uskumru Ege Denizinde doğal ortamda bulunmakla birlikte artan ihtiyaca karşılık veremediğinden piyasada  Norveç&#8217;ten ithal edilen ürünler de satılmaktadır. Soğuk suda yaşayan balıkların genel özelliği yağlı olmalarıdır. Bu sebeple <strong>Norveç&#8217;ten ithal edilen uskumrular Ege Denizinde yakalanan yerli uskumrulara nazaran daha yağlıdırlar.</strong> Yerli uskumru fırında, ızgarada ve tavada pişirmeye uygunken Norveç&#8217;ten İthal gelenler genelde ızgarada veya fırında pişirilirler. Aralarında nasıl bir fark olduğunu merak ediyorsanız &#8220;<span style="color: #333399;"><strong><a style="color: #333399;" href="https://baliktarifi.com/yerli-uskumru-ithal-uskumru-ve-kolyoz-ucgeni" target="_blank" rel="noopener noreferrer">Yerli Uskumru, İthal Uskumru ve Kolyoz</a></strong></span>&#8221; başlıklı yazımızda bu konuya detaylı bir şekilde değindik.</p>
<p><strong>Balığın yağlı olması lezzet açısından olumlu bir durumdur. Ayrıca <span style="color: #333399;"><a style="color: #333399;" href="https://baliktarifi.com/balik-yag-asitlerinin-insan-sagligi-icin-onemi-bilimsel-makale" target="_blank" rel="noopener noreferrer">Omega-3</a></span> yağ asitleri açısından daha zengin olduğu anlamına da gelir. Bu sebeple soğuk suda yaşayan Somon balığı ve Uskumru omega-3 yağ asitleri bakımından da en zengin balıklar arasındadırlar.</strong></p>
<p>Bu tarifte size tavsiyem balığı aldığınız yerde fileto şeklinde kestirmeniz. Hatta mümkünse kılçıklarını aldırırsanız çok daha keyifli bir yemek yersiniz. <strong>Fileto demek balığı uzunlamasına ortadan ikiye kesmek demektir.</strong> <strong>Veya yaprak şeklinde de açtırabilirsiniz.</strong> <strong>Balıkçılar  bu işleme &#8220;İstanbul açma&#8221; veya &#8220;yaprak açma&#8221; derler. Yaprak şeklinde açıldığında balık ikiye ayrılmaz. Sırt derisinden her iki parça birbirine bağlı kalır.</strong></p>

<h2>HAZIRLANIŞI</h2>
<p>Patatesleri soyduktan sonra ince dilimler halinde doğrayın.</p>
<p>Bir kap içerisinde patateslerle birlikte zeyinyağının yarısını, 2 diş dövülmüş sarımsak, defne yaprakları, tuz ve karabiber ile harmanlayıp fırın kabına alın.</p>
<p>Patatesleri önceden ısıtmış olduğunuz fırında 200 derecede 10 dk kadar pişirin.</p>
<p>Bu süre sonunda patatesler yarı pişmiş olacaktır. Kabı fırından çıkarıp fileto çıkartılmış balıkları nazikçe tuz ve karabiber ile ovup patateslerin üzerine yerleştirin.</p>
<p>Ufak bir kap içerisinde 1 diş dövülmüş sarımsak, kalan zeytinyağı ve doğranmış maydanozları karıştırıp bu karışımı da balıkların üzerine dağıtın.</p>
<p>Henüz sıcak olan fırında 200 derecede 15 dk kadar daha pişirin.</p>
<p>Turbo özelliği olan bir fırında bu süre uskumrunun pişmesi için yeterli bir süredir. Ancak balığın büyüklüğüne, patateslerin iriliğine ve kendi fırınınızın gücüne göre bu süreyi değiştirebilirsiniz.</p>
<p>Ancak dikkat etmeniz gereken nokta fazla pişirip balığı kurutmamaya özen göstermelisiniz.</p>

										<content:encoded><![CDATA[<p>Kış aylarında balığın bollaşması ile birlikte mutfaklardan enfes kokular gelmeye başladı. Yazın yiyebileceğimiz balık  türü sayılı iken kışın kesemize ve denizlerin bereketine bağlı olarak bu sayı oldukça artıyor.</p>
<p>Uskumru da ülkemiz sularında eskiden oldukça bol olan ancak günümüzde biraz daha az çıkan bir balık. Bu ihtiyacı karşılamak için Norveç&#8217;ten ciddi miktarda uskumru ithal ediyoruz. Balık marketlerde kolyoz dediğimiz yine bir uskumru cinsi olan balığı da pek yabana atmamak gerek. Zira görünüm olarak benzerliği kadar tam olmasa da lezzet olarak da uskumruyu aratmıyor.</p>
<p><strong>Yerli uskumru, Norveç&#8217;ten ithal gelen dondurulmuş uskumru veya kolyoz arasındaki farkı anlayabilmek için uzman olmaya gerek. <a href="https://baliktarifi.com/yerli-uskumru-ithal-uskumru-ve-kolyoz-ucgeni" target="_blank" rel="noopener noreferrer">Buradaki</a> başlıkta gerekli ayrıntıları sizlerle daha önce paylaşmıştım.</strong></p>
<p>Bu tarifte kullandığımız malzemeler ile yerli-ithal uskumru veya kolyozu hangisini dilerseniz onu pişirebilirsiniz. Ancak bir ayrıntıya dikkat etmekte fayda var. <strong>İthal uskumru yerlisine ve kolyoza nazaran biraz daha yağlı bir balıktır. Eğer ithal uskumru pişirecekseniz sos malzemeleri arasında yer alan zeytinyağından 2 kaşık kullanmanız yeterlidir. Yerlisi için 3 kaşık ve Kolyoz için ise 4 kaşık yeterlidir.</strong></p>

<li>4 adet orta boy uskumru (yerli veya ithal)</li>
<li>1 adet orta boy kuru soğan</li>
<li>7-8 adet çeri domates (veya ufak tarla domates)</li>
<li>1 adet limon</li>
<li>2-3 diş sarımsak (Ezilmiş olmasına gerek yok)</li>
<li>2 dal taze biberiye</li>
</ul>
<h3>Sos Malzemeleri:</h3>
<ul>
<li>1 adet limon suyu</li>
<li>1 adet portakal suyu (Olursa taze sıkılmış harika olur. Eğer mevsimi değilse yapacak bir şey yok.)</li>
<li>3 yemek kaşığı kadar zeytinyağı (Yukarıda yerli-ithal veya kolyoza göre açıklamaları yazdım.)</li>
<li>1 çay kaşığı sumak</li>
<li>1 çay kaşığı karabiber</li>
<li>1 çay kaşığı tuz</li>
</ul>

<h2>HAZIRLANIŞI:</h2>
<p>Uskumruları güzelce yıkadıktan sonra suyunu süzün. Bu arada balıkları pişirmeden önce yıkarken asla sıcak suyla yıkamayın. Mümkün olduğunca soğuk suyla yıkamaya özen gösterin. Suyunu tamamen yok etmek için kağıt havlu kullanabilirsiniz.</p>
<p>Balıkları iyice kuruladıktan sonra fırın tepsisi veya fırın kabına alın.</p>
<p>Soğanları yarım ay şeklinde kesin, limonları halka halka kesin.</p>
<p>Sarımsakları bütün olarak kullanabileceğiniz gibi 2-3 parçaya da bölebilirsiniz.</p>
<p>Soğan, limon halkaları, sarımsak, domatesler ve biberiyeyi tepsiye balıkların üzerine dağıtın.</p>
<p>Sos için verilen tüm malzemeleri (limon suyu, portakal suyu, zeytinyağı, sumak, karabiber ve tuzu) bir kasede karıştırıp balıkların üzerinde gezdirin.</p>
<p><strong>Üzerini yağlı kağıtla kapatıp önceden ısıtılmış olan fırında 200 derecede 20 dakika kadar pişirdikten sonra biraz kızarmaları için yağlı kağıdı alın ve 10 dk kadar daha pişirin.</strong></p>
<p><strong>Bu tarif biraz daha sulu bir tarif olduğundan pişirme sürelerini kendiniz ayarlayabilirsiniz. Balıkların üzerinde yağlı kağıt olduğu sürece daha sulu kalacaktır. Yağlı kağıdı alıp öyle pişirmeye devam ettiğinizde ise suyunu yavaşça çekecek ve üstten kızarmaya başlayacaktır.</strong></p>
<p>Toplam pişirme süresi 30 dk kadar desek de bu süre balıkların büyüklüğüne, bütün veya fileto olup olmadıklarına ve fırınınızın türüne bağlı olarak değişir. Çatal yardımıyla pişip pişmediğini kontrol edebilirsiniz. Bir kez denedikten sonra ne kadar basit olduğunu göreceksiniz.</p>
<p>Korkulanın aksine balık pişirmek oldukça kolaydır.</p>
