<p>Izgara ve kızartma türleri ile birlikte tüketilen aioli <strong><a href="https://baliktarifi.com/citir-kalamar-tava-tarifi">kalamar tava</a></strong>, karides gibi deniz ürünlerinin yanına da çok yakışır. Evinizde kolaylıkla hazırlayabileceğiniz bu sosu sadece balıklarla değil patates kızartması ile de tüketebilirsiniz.</p>

Bunun için birkaç püf noktaya dikkat etmeniz yeterli.</strong> Kalamar marine sosu hazırladıktan sonra bu sos içerisinde terbiye ederseniz içi yumuşacık dışı çıtır kıvama gelecektir.</p>
<p style="padding-left: 40px;">Kalamar her ne kadar kendi başına lezzetli olsa da yanında servis edebileceğiniz bir sos olursa harika olur. <strong><span style="color: #ff0000;"><a style="color: #ff0000;" href="https://baliktarifi.com/kalamar-tavanin-vazgecilmezi-tarator-sos-tarifi" target="_blank" rel="noopener noreferrer">Tarator sos</a></span></strong> bu konuda en bilineni olsa da bu yazıda sizlere hepimizin makarna sosu diye bildiği <strong>marinara sosunu</strong> önereceğim. Domates, soğan, sarımsak ve baharat ile kolayca hazırlayabildiğimiz bu sos genelde kızartmalarda ve makarnalarda kullanılıyor. Bu sosun farklı türevlerinin İtalya&#8217;da pizza sosu olarak kullanıldığını da bilmenizi isterim. Ayrıca <a href="https://baliktarifi.com/disi-citir-ici-yumusacik-kalamar-tava"><strong>kalamar</strong></a> tava yanına çok yakışan marinara sosunu <a href="https://baliktarifi.com/hindistan-cevizli-karides-tarifi" target="_blank" rel="noopener noreferrer">karidesin</a> yanında da servis yapabilirsiniz.</p>

<h2>HAZIRLANIŞI:</h2>
<p>Önce sosu marinara sosunu hazırlayalım.</p>
<p>Soğanları da rendeleyin veya robottan geçirin. Tavaya zeytinyağını döküp soğanlar hafiften pembeleşmeye başlayana kadar kavurun ve sarımsakları atın ve 1-2 dakika da sarımsaklar kavruluncaya kadar bekleyin.</p>
<p>Domatesleri rendeleyin ve tavaya ekleyin. 1 yemek kaşığı sirke, yarım çay bardağı su ve kalan tüm baharatları da ilave edip orta ateşte pişirmeye devam edin. Defne yaprağı sosa hafif bir aroma verecektir.</p>
<p>Malzemeler suyunu çekene dek yaklaşık 15-20 dk kadar dibinin tutmaması için arada bir karıştırarak pişirin.</p>
<p>Sos biraz katılaşmaya başlayınca ateşi kapatıp defne yaprağını da içinden alabilirsiniz. Sosunuzu dinlenmesi için kenara alın.</p>
<h3>Kalamarlar:</h3>
<p>Temizlenmiş ve halka şeklinde doğranmış kalamarları önce marine sosu hazırlayıp terbiye etmemiz gerekli.</p>
<p>Kısaca bahsetmek gerekirse kalamarları 1 çay kaşığı karbonat, 1 adet kesme şeker ve 1 limon suyu ile karıştırıp 20 dk kadar sıkarak yoğurun.</p>
<p>Köpürmeye başlayacaktır sorun yok. Hazırladığınız bu karışım içerisinde buzdolabında vaktiniz varsa 1 gün yoksa en azından 2 saat kadar dinlendirin.</p>
<p>Pişirme işlemine başlarken buzdolabından çıkardıktan sonra bu sostan çıkardığınız kalamarları sakın yıkamayın. Oda sıcaklığına gelince pişirmeye başlayabilirsiniz.</p>
<p><strong>Kalamar pişirmenin en önemli püf noktası yüksek ısıda ve bol yağda parça parça pişirmektir. Kalamarları yağa bıraktıkça yağın ısısı düşeceğinden hepsini aynı anda pişirmek yerine birkaç seferde pişirmelisiniz.</strong></p>
<p>Derin bir kaba 2 su bardağı veya biraz daha fazla sıvı yağ koyup iyice kızdırın.</p>
<p>Bir tepsi veya kap içerisinde un, tuz ve karabiberi karıştırın ve kalamarları una bulayın.</p>
<p>Hepsini aynı anda yağa atarsanız yağın ısısını düşüreceğinden yağ çekecektir. Bu yüzden parça parça pişirmenizi tavsiye ederim. Her defasında yağın tekrar kızmasını bekleyip öyle pişirmeye devam edin.</p>
<p>Kalamar hızlı pişen bir deniz ürünüdür. Kızgın yağda parça parça pişirirken 1 dk kadar kısa sürede pişiyor. Emin olmak için kevgir kullanarak hafifçe dokunabilirsiniz. Rengi altın sarısına dönmeye başladığında dış yüzeyi sertleşir ve çıtırlaşır. Bu sayede piştiğini anlarsınız.</p>
<p>Eğer bol ve kızgın yağda pişirirseniz çok az yağ çeker. Ancak siz yine de kağıt peçete serdiğiniz tabağa kevgir yardımıyla alarak fazla yağdan kurtulabilirsiniz.</p>

										<content:encoded><![CDATA[<p>Bir İtalyan klasiği olan <strong>marinara sosu</strong> bizim mutfağımıza hiç de uzak olmayan enfes bir sos. <strong>Domates, soğan, sarımsak ve çeşitli baharatlar kullanarak çok kolay bir şekilde hazırlanan bu sosu makarnalarda veya kızartmalarda kullanabiliriz.</strong> Biz mutfakta buna makarna sosu veya domates sosu desek de İtalyan mutfağında çokça kullanılıp dünyaya da buradan yayıldığı için <strong>Marinara sosu</strong> olarak bilinir.</p>
<p>Evdeki malzemelerle oldukça kolay bir şekilde hazırlayabileceğiniz Marinara sosunun <strong>ana maddesi domatestir</strong>. <strong>Hele tarla domates kullanırsanız tadı ve kokusu bir harika olur.</strong> Bu yüzden yazın domatesin güzel zamanında yapıp ufak buzdolabı poşetlerinde dondurabilir kışın ısıtıp lezzete lezzet katabilirsiniz. Eğer dondurmak istemezseniz de tıpkı yazdan <strong>şişe domates yapar gibi ufak soda şişelerine veya ufak kavanozlara kapatırsanız</strong> (tabii henüz çok sıcakken şişelemeniz ve ağzını sıkıca kapatmanız gerekir) kışın elinizin altında hemen açıp kullanabileceğiniz harika bir sos da olmuş olur.</p>
<p><strong>Marinara sosu, <span style="color: #f72d37;"><a style="color: #f72d37;" href="https://baliktarifi.com/kalamar-tava-tarifi" target="_blank" rel="noopener noreferrer">Kalamar tava</a></span> veya <span style="color: #f72d37;"><a style="color: #f72d37;" href="https://baliktarifi.com/tavada-citir-karides-tarifi" target="_blank" rel="noopener noreferrer">karides</a></span> yanında servis edebileceğiniz oldukça lezzetli bir sostur.</strong> Domatesleri rendeleyerek yapabileceğiniz gibi mutfak robotunuz veya rondonuz varsa küp şeklinde doğrayıp biraz pişirdikten sonra robottan geçirebilirsiniz. Aynı şekilde soğanı da rendeleyebilir veya robottan geçirebilirsiniz. Baharat konusunda da illa şu baharat olacak diye bir şart yok. Ancak mutfakta birbirine yakışan baharatlar genelde bellidir. Arzuya göre değişiklik yapabilirsiniz. Hazırladıktan sonra taze nane serperseniz o da oldukça hoş bir aroma verir.</p>

<li>1 yemek kaşığı elma sirkesi</li>
<li>1 çay kaşığı kekik</li>
<li>1 çay kaşığı fesleğen</li>
<li>1 çay kaşığı karabiber</li>
<li>Yarım çay kaşığı toz şeker</li>
<li>Yarım çay bardağı su</li>
<li>1 adet kurutulmuş defne yaprağı (sos içerisinde esans vermesi için)</li>

<h2>HAZIRLANIŞI:</h2>
<p>Domatesleri soyun ve rendeleyin. Eğer robottan geçirecekseniz küp küp doğrayabilirsiniz. Bu arada domatesi suyu ile pişireceğiz.</p>
<p>Soğanları da rendeleyin veya robottan geçirin.</p>
<p>Tavaya zeytinyağını soğanlar hafiften pembeleşmeye başlayana kadar kavurun ve sarımsakları atın ve 1-2 dakika da sarımsaklar kavruluncaya kadar bekleyin.</p>
<p>Domatesleri de ilave ederek biraz yumuşayıncaya kadar kavurun.</p>
<p>Domatesler yumuşadıktan sonra robottan geçirin ve tekrar tavaya dökün.</p>
<p>1 yemek kaşığı sirke, yarım çay bardağı su ve kalan tüm baharatları ilave edin orta ateşte pişirmeye devam edin.</p>
<p>Defne yaprağı da sosun içerisine hafif bir aroma verecektir.</p>
<p>Malzemeler suyunu çekene dek yaklaşık 15-20 dk kadar dibinin tutmaması için arada bir karıştırarak pişirin.</p>
<p>Sos biraz katılaşmaya başlayınca ateşi kapatabilirsiniz. Defne yaprağını da içinden alabilirsiniz.</p>
<p>İster sıcak ister soğuk bir şekilde servis yapabilirsiniz.</p>
<p>Servis sırasında üzerine az miktarda ince doğranmış maydanoz veya taze nane serperseniz hem görüntü hem de aroma açısından harika olur.</p>

Acı biber olarak kırmızı şili biberi kullanılıp şeker ile tatlandırıldığı için tatlı acı sos ismi ile kullanılır. Pişirdiğiniz çıtır karideslerin yanında servis edebileceğiniz gibi <span style="color: #333399;"><strong><a style="color: #333399;" href="https://baliktarifi.com/kalamar-tava-tarifi" target="_blank" rel="noopener noreferrer">kalamar tavaya</a></strong></span> da oldukça yakışan bu sosu hemen her kızartmanın yanında yemek isteyeceksiniz.</p>
<p>Tatlı ve acının mükemmel uyumu yanı sıra içerisindeki sarımsak ve sirke aroması lezzete lezzet katar. Eğer acıyla aranız çok da iyi değilse size tavsiyem içindeki çekirdeklerini ayıklamanız olacaktır. Zira biberin en acı tarafı çekirdekleridir.</p>
<p>Patates kızartmaları, tavuk kızartmaları, kalamar tava, karides tava, et yemekleri yanında çok seveceğiniz tatlı acı sosu hazırlamak oldukça kolay. Ocakta kaynamaya sırasında nişasta ile sosun yoğunluğunu artırabilir, su ekleyerek azaltabilirsiniz.</p>
<h2>MALZEMELER:</h2>

<li>3-4 adet Şili biberi (Acı kırmızı biber)</li>
<li>1,5 çay bardağı pirinç sirkesi (yoksa elma sirkesi de kullanabilirsiniz)</li>
<li>1 çay bardağı toz şeker</li>
<li>1 çay bardağı su</li>
<li>3-4 diş sarımsak</li>
<li>1 tatlı kaşığı nişasta</li>
<li>Bir tutam tuz</li>
</ul>
<h2>HAZIRLANIŞI:</h2>
<p>Biberleri yıkadıktan sonra uzunlamasına ikiye kesin ve çekirdeklerini ayırın. Eğer çok acı seviyorsanız çekirdekleri kalabilir. Bu arada biberleri doğrama sırasında eldiven kullanabilirsiniz. Zira biberlerin acısı elden zor çıkıyor.</p>
<p>3-4 diş sarımsağı soyduktan sonra biber ve 1,5 çay bardağı sirkeyi robottan geçirin.</p>
<p>Robottan geçirdiğiniz karışımı bir sos tenceresine döküp 1 çay bardağı su ve 1 çay bardağı toz şekeri de ilave edip kısık ateşte 10 dk kadar kaynatın.</p>
<p>Bir yandan da ufak bir kasede 1 tatlı kaşığı nişastayı 2-3 kaşık soğuk su ile iyice ezin.</p>
<p>Nişastayı sosa ilave edin ve topaklanmasın diye devamlı karıştırın.</p>
<p>1-2 dk kadar bu şekilde karıştırdıktan sonra tuzu ekleyip altını kapatın.</p>
<p>Soğuduktan sonra kavanoza koyarak buzdolabında saklayabilirsiniz.</p>
