<p>Karides temizlendiğinde gramaj olarak neredeyse yarı yarıya azalacaktır. O yüzden hazırladığınız tariflerde ne kadar karidese ihtiyacınız varsa gramaj olarak yaklaşık iki katı satın almanızı tavsiye ederim. Bu tarif için konuşursak 350 gr karides elde etmek için yaklaşık 600-700 gr civarında karides almalısınız.</p>

<p>Tavada kızartması haricinde fırında da yapılabilen dil balığını pişirirken tereyağı kullanmanız lezzeti katlayacaktır.</p>
<p>Bir yüzü kahverengi diğer yüzü krem rengi derisi pişirmeden önce soyulması gerekli. Balıkçınızdan rica ederseniz sizin için kolaylıkla ayıklayacaktır.</p>

<p>Bu yazıda dil balıklarını tereyağı ve zeytinyağı içerisinde kızarttıktan sonra servis tabağına alıyoruz. Kalan yağ içerisinde limon suyu, maydanoz, kekik, tuz ve karabiber ile bir sos hazırlayıp balıkların üzerine gezdirip servis yapıyoruz. Tereyağının yanmaması için içerisine zeytinyağı ilave ediyoruz. Tereyağı aromasının daha baskın olmasını isterseniz ölçüleri değiştirebilirsiniz.</p>

<p>Fırın kabı içerisinde baharatlarımızı tereyağı ile hafiften cızırdadıp derisi üstte kalacak şekilde balığımızı bir müddet bu şekilde pişirince baharatların aroması ete nüfuz ediyor. <a href="https://baliktarifi.com/kagitta-somon-tarifi">Somon</a> ve alabalık biraz pişince derisini kağıt gibi üzerinden soyabilirsiniz. Eğer siz derisini aldırmışsanız bunun için ekstra uğraşmanıza gerek kalmaz.</p>
<p>Spatula yardımı ile balığımızı ters çevirip fırının üst kısmına yakın yerde bir müddet daha pişirince işlem tamamlanıyor. Artık içindeki tereyağı sosunu kaşık yardımı ile dağıtın ve kalan baharat ve limon dilimleri ile süsleyince soframız hazır.</p>

<p>Bu yazıda tavada pişirdiğimiz alabalıktan kalan yağ içerisinde limon, sarımsak ve tereyağı baskın tatları ile bir sos hazırlayarak daha sulu bir lezzet sunuyoruz.</p>
<p>Balıkları pişirdikten sonra kenara alıp kalan yağ içerisinde sosumuzu hazırladıktan sonra tekrar birleştiriyoruz. Tereyağı kokusu eşliğinde limon aroması zaten hafif olan alabalığı çok daha lezzetli hale getirecektir.</p>

<p>Somon balığı ile aynı familyadan olmasından ötürü <strong>omega 3</strong> yağ asitleri bakımından oldukça zengin olan alabalık tatlı su balığıdır. Ancak yapısı gereği tuzlu suda da yaşayabilme özelliğine sahip olan olan bu lezzet soğuk suyu sever.</p>
<p>Yağ bakımından pek yağlı olmadığından dolayı genelde Anadolu mutfağında kızartması yapılan alabalık uygun şekilde marine edildiğinde ve pişirme süresine dikkat edildiğinde <strong>ızgara, fırın ve güveçte de oldukça lezzetli olur.</strong></p>

<p>Bu arada alabalık ile ilgili güzel bir özellik paylaşmak isterim. <strong>Diğer balıkların aksine alabalığın kılçığı yumuşaktır</strong> ve omurgaya sağlam bir şekilde yapışmıştır. <strong>Dolayısı ile pişirmeden sonra omurga kemiğini tutup çektiğinizde tüm kılçıklar da ayrılır. Çocuğunuzun eline verip gönül rahatlığı ile yemesini izleyebilirsiniz.</strong></p>
<p>Bu yazıda sizler için balıkçılarda <strong>Karadeniz Somonu veya Deniz Alası</strong> isimleri ile satılan iri boy alabalık tarifi paylaşıyoruz. Her ne kadar yukarıda belirttiğim gibi pişirdikten sonra kılçığı kolayca ayrılsa dahi dilerseniz balıkçıdan orta kemiğini almasını rica ederseniz sofrada kılçıkla uğraşmak durumunda kalmazsınız.</p>

<h2>HAZIRLANIŞI:</h2>
<p>Alabalığı nazikçe yıkadıktan sonra tüm suyunu süzün. İyice sudan arındırmak için havlu kağıt kullanabilirsiniz.</p>
<p>İçini ve dışını zeytinyağı ve yarım limon suyu ile elinizle iyice yedirin.</p>
<p>Bir kap içerisinde zeytinyağı, limon suyu, sarımsak, biberiye, tuz ve karabiber ile balıkları karıştırın.</p>
<p>Bu şekilde buzdolabında en azından 20-30 dk kadar bekletin ki tuz ve zeytinyağı balığın her yerine nüfuz ederek daha lezzetli olsun.</p>
<p>Alabalık çok yağlı bir balık olmadığından dolayı fazla pişirip kurutmamak gerekir. Biraz sulu kalması daha lezzetli olmasını sağlar.</p>
<p>Önceden ısıtmış olduğunuz ızgarada her bir yüzünü yaklaşık 5-6 dk kadar pişirmeniz yeterlidir. Eğer balık çok iriyse fazladan birkaç dakika daha pişirebilirsiniz.</p>
<p>Ayrıca bu süre kullandığınız ızgaranın türüne göre de değişiklik gösterebilir.</p>
<p>Pişirme sırasında sürekli çevirmeyin ki balık dağılmasın. Rengi opaklaşmaya başladığında piştiğini anlarsınız.</p>
<p>Eğer mangalda yapacaksanız köfte-balık ızgarası kullanarak iyice közlenmiş ateşte yavaş yavaş pişirmenizi tavsiye ederim. Mangalda bu pişirme süresi farklılık gösterir. Ateşin yoğunluğuna ve ızgaranın ateşe mesafesi bu süreyi etkiler.</p>
<p>Pişirme işleminden sonra henüz dumanı tüterken bir fırça yardımıyla üzerine tereyağı gezdirin.</p>
<p>Balığınızı keskin bir bıçak yardımı ile parçalayarak salata yanında servis edebilirsiniz.</p>

<h2>HAZIRLANIŞI:</h2>
<p>Karideslerin kabuklarını temizleyip yıkayın ve suyunu süzün.</p>
<p>Tamamen kurulamak için kağıt peçete kullanabilirsiniz.</p>
<p>Orta ateşte 2 yemek kaşığı tereyağını bir tavada eritin.</p>
<p>Karidesleri, tuz ve karabiberi ilave edin ve pembeleşinceye kadar hafif karıştırarak 2-3 dk kavurun. (merak etmeyin bu süre gayet yeterlidir çok uzun süre pişirirseniz karides lastik gibi olur.) Ocağın altını kapatıp kenara alın.</p>
<p>Başka bir tavada 2 yemek kaşığı tereyağını eritin ve sarımsakları 1 dk kadar kavurun.</p>
<p>1 fincan su, tavuk suyu bulyonu ve limon suyunu tavaya dökün. Kaynamaya başlayınca altını kısın ve biraz suyunu çekene kadar kısık ateşte 1-2 dk kaynatın.</p>
<p>Kenara aldığınız karideslerle karıştırın. İnce doğranmış maydanozları ilave edip karıştırın.</p>
<p>Sıcak servis edin.</p>
