<p>Alabalık, tatlı su balıkları arasında belki de en lezzetli ve en faydalı olanlar balıklardan biri. Somon balığı ile aynı familyadan olması sebebiyle omega-3 yağ asitleri bakımından da oldukça zengindir. Alabalık tesislerinde genelde kiremitte farklı soslar ile yapılır ve tereyağı ile özdeşleşmiştir. Kılçığı yumuşak ve piştikten sonra kolayca ayrıldığından çocuklar için tercih edilen bir balıktır.</p>

<p>Alabalık, tatlı su balığı olduğu için kimileri tarafından ön yargıyla yaklaşanlar olabiliyor. Tattıklarında ise ön yargılarından dolayı pişman olup menülerine daha sık koyuyorlar. <strong>Alabalık</strong> soğuk ve temiz suyu seven bir balık. Az yağlı olduğundan genelde <strong>kızartması</strong> yapılır. Ancak dilerseniz ızgara ve fırında da pişirebilirsiniz. Kiremitte farklı soslarla da oldukça lezzetli olur.</p>

<p><a href="https://baliktarifi.com/tavada-tereyagi-soslu-alabalik-tarifi" target="_blank" rel="noopener noreferrer"><strong>Tereyağlı alabalık</strong></a> denince yanlış anlaşılan bir husus var ki balığı tereyağında pişiremezsiniz. Tereyağı yanar. Balığı zeytinyağında (veya sıvı yağda) pişirdikten sonra henüz sıcakken üzerine tereyağı sürmelisiniz. Tereyağının aroması ile birleşince inanılmaz bir lezzet ortaya çıkar.</p>
<p>Bu yazıda limon, biberiye, maydanoz ve soğan ile hazırladığımız bir alabalık tarifi derledik. Alabalık genelde kızartılsa da buna benzer farklı aromalarla fırında da pişirebilirsiniz. Önemli olan balığı kurutmadan pişirmektir. Şimdiden afiyet olsun 🙂</p>

<p><strong>Doğada anne sütü haricinde sadece balıkta bulunan omega-3 yağ asitleri</strong> özellikle gelişim dönemlerinde çocukların bedensel ve zihinsel gelişimleri için olmazsa olmazlardandır. Bu sebeple balık yemeyi reddeden, balığı sevmeyen çocuklara doktorlar tarafından balık yağı veya <a href="https://baliktarifi.com/hangi-balikta-ne-kadar-omega-3-ve-civa-bulunur" target="_blank" rel="noopener noreferrer"><strong>omega-3</strong></a> kapsülleri verilmektedir. Tabii ki doğal beslenmenin önemini kavrayan ve buna göre yaşayan anne babalar bu tür omega-3 destekleri yerine balık yedirmeyi tercih ederler.</p>
<p>Balık sever bir anne baba olarak bebeğimizin balık yememesi durumuyla karşılaşınca ilk aşamada oldukça üzüldük (Hele beni düşünün :/ ) Her türden balığı ızgarada, fırında, buharda vb. farklı pişirme yöntemleri ile denesek de ilk başlarda yedirmekte başarılı olamamıştık. Balık denemelerinin ilk haftalarında bulduğumuz bu yöntem sayesinde fark ettirmeden olsa balık yedirebilmeyi başardık.</p>
<p><strong>Aslında yöntem oldukça basit: balık aromasını soğan ve sarımsak kullanarak baskılamak ve çorba içerisinde sunmak.</strong> Çorba konusunda dilerseniz sebze çorbası da hazırlayabilirsiniz. Oğlumuz tarhana çorbasını çok sevdiği için biz de tarhana çorbası içerisinde balık verdik ve gayet de güzel yedi. Hala haftada 2 gün farklı balıklar pişirip yedirmeye çalışıyoruz. Baktık yemiyor hemen tarhana çorbası içerisine ilave edip oradan yedirmeye devam ediyoruz.</p>

<p>Tarhana çorbasına gelince her yörenin kendine ait bir tarifi olsa da ana malzemeleri genel olarak un, yoğurt, soğan, domates, kırmızı biber, yeşil biber, nane, tuz ve baharattan oluşur. Anne usulü içerisinde yok yok denir ya o hesap! Bir dönem beslenme sorunu yaşadığımızda doktorumuz tarhana çorbası içsin başka bir şeye gerek yok demişti. Düşünün bu denli besleyici bir çorba içerisine bir de balık girdi mi başka da bir şeye ihtiyaç duymazsınız.</p>
<p><strong>Tariften bahsedelim:</strong> <strong>Beyaz etli olup baskın bir kokuya sahip olmadığı ve kılçık konusunda sorun yaşamamak için levrek veya çipura kullanıyoruz. Ama dilerseniz sardalya, hamsi, somon, uskumru gibi omega-3 yönünden daha zengin balıkları da kullanabilirsiniz.</strong> Fırında yağlı kağıtta sade bir şekilde balığı pişirdikten sonra etini ayırıyoruz. Burada biraz ince çalışmanız gerekli. Ardından soğan ve sarımsağı kavurup balığı ilave ediyoruz. Ilık su ilave edip önceden ıslatmış olduğumuz tarhanayı katıp kaynayana dek karıştırıyoruz. Her yörenin bir tarhana çorbası pişirme yöntemi vardır. Bildiğiniz yöntemle pişirmeye devam edin. Sadece en başta pişmiş balığı, soğan ve sarımsak ile kavurup katın yeterli. Dilerseniz pişmiş tarhana içerisine de katabilirsiniz.</p>

Kalabalık sofralar için birebir olan bu tarifi herkes çok sevdi. Misafir geldiğinde gününüzü kurtaracak pratik ama enfes bir patatesli alabalık tarifine hazır olun.</p>
<p>Alabalık az yağ olması sebebiyle genelde tavada pişirilir. Tereyağı ile alabalığın birbirine çok yakıştığını hemen herkes duymuştur. Ama maalesef yanlış bir şeyi düzeltmek gerek. Alabalığı sıvı yağda (ben her yemekte ve kızartmada olduğu gibi zeytinyağı kullanıyorum) kızartıp henüz sıcakken üzerine tereyağı gezdirmek gerek. <strong><a href="https://baliktarifi.com/tavada-tereyagi-soslu-alabalik-tarifi" target="_blank" rel="noopener noreferrer">Tereyağında pişirmeye</a></strong> kalkarsanız yağ yanar bu da lezzeti bastırır. Mısır ununa bulayıp zeytinyağında kızartın ondan sonra üzerine tereyağı gezdirin bu kadar basit.</p>

<p>Peki alabalık az yağlı ise fırında olmaz mı? Olur hem de harika olur. Fırında balık pişirirken size tavsiyem yağlı kağıt kullanmanız zira enfes bir yemekten kalkıp çaya oturmak varken tepsiyi ovalamak zorunda kalmak istemezsiniz.</p>

<p>Et yemeklerine çok yakışan defne yaprağını sadece fırında balık yaparken değil ızgarada pişirirken de kullanabilirsiniz. Bu tarifte balıklarımıza oldukça hoş bir aroma kazandırıyor.</p>

<p>Patatesler altta kalacağı için size tavsiyem önden baharatını verin. Bir kap içerisinde patatesleri tuz, karabiber ve kekik ile karıştırın. Yağlı kağıt serdiğiniz tepsiye sırasıyla soğan, patates ve balıkları yerleştirin. Sarımsakları da dağıttıktan sonra yağ gezdirip fırına verin.</p>

<p>Böyle bir yemeğin pişme süresi patatesin pişme süresine göre belirlenir. Et yemeği yapıyor olsaydınız pişirme süresi çok da önemli değildi ancak burada balıkların kurumaması gerekiyor. <p>Bu yazıda tavada pişirdiğimiz alabalıktan kalan yağ içerisinde limon, sarımsak ve tereyağı baskın tatları ile bir sos hazırlayarak daha sulu bir lezzet sunuyoruz.</p>
<p>Balıkları pişirdikten sonra kenara alıp kalan yağ içerisinde sosumuzu hazırladıktan sonra tekrar birleştiriyoruz. Tereyağı kokusu eşliğinde limon aroması zaten hafif olan alabalığı çok daha lezzetli hale getirecektir.</p>

Bu sayede balık kendi buharı ile hem daha yumuşak olup hem de daha kolay pişiyor. Ayrıca alabalığın kılçığı alındığı için çevirme sırasında maşa ile uğraşıp balığı parçalamamış oluyorsunuz.</p>

										<content:encoded><![CDATA[<p>Alabalık oldukça lezzetli ve kılçık yönüyle de insanı hiç rahatsız etmeyen bir balıktır. Tavada ızgarada ve fırında da pişirilmeye oldukça müsait olan alabalık, somon balığı ile aynı familyadan olmasından ötürü omega 3 yağ asitleri bakımından da oldukça zengindir.</p>
<p>Bu yazıda sizler için mantarlı ve kremalı bir alabalık tarifi derledik. Balıkları satın alırken kılçığını ayıklatmanızı tavsiye ederim. Alabalık oldukça kolay ayıklanır ve kılçığı da kolay çıkarılır. Hatta keskin bir bıçak yardımı ile evde kendiniz bile kılçığını ayıklayabilirsiniz.</p>
<p>Tarif iki aşamadan oluşuyor. Önce balık ve mantarları tereyağında kızartıp daha sonra fırında pişiriyoruz. Tavada pişirme işleminden önce balıklara tuz ve ve karabiber serperek kısa süreliğine tam pişirmeden soteliyoruz. Aynı şekilde mantarları da tam pişirmeden aynı yağ içerisinde soteleyip en son krema ile fırında pişirme işlemini tamamlıyoruz.</p>
<p>Görüntüsü, kokusu ve lezzetiyle harika bir balık yemeği hazırlamak için uzun uğraşlar gerekmiyor. Zahmetsiz bir yemek için buyurun tarifimize:</p>

<li>2 adet orta boy alabalık (fileto çıkarılıp kılçıkları alınmış)</li>
<li>250 gr kültür mantarı (ufak ufak doğranmış)</li>
<li>4 yemek kaşığı tereyağı</li>
<li>150 ml krema (marketlerde hazır satılan ufak boy kremalar 200 ml onlardan kullanabilirsiniz. Krema miktarını arzuya göre artırıp azaltabilirsiniz)</li>
<li>1 adet yumurta sarısı</li>
<li>Tuz</li>
<li>Karabiber</li>

<h2>HAZIRLANIŞI:</h2>
<p>Yemeğimiz iki aşamadan oluşuyor. Önce balıklar ve mantarları tavada ayrı ayrı soteleyeceğiz. Ardından fırında pişireceğiz.</p>
<p>Balıkları yıkadıktan sonra suyundan iyice arındırın. Bunun için havlu kağıt kullanabilirsiniz. Zira tavada kısa süreliğine kızartacağımızdan su yağ sıçramasına sebep olur.</p>
<p>Balıkları kuruladıktan sonra tuz ve karabiber serperek her tarafına iyice yedirin.</p>
<p>Bir tavada 4 yemek kaşığı tereyağını eritip balıkların önce derisi alta gelecek şekilde 4-5 dk kadar kızartın. Ardından ters çevirip 3-4 dk kadar daha kızartın.</p>
<p>Kızarttığınız balıkları borcama veya fırın kabına alın.</p>
<p>Aynı yağ içerisinde mantarları yaklaşık 8-10 dk kadar soteleyin. Bir tutam tuz ve karabiber atıp 1 dk daha karıştırıp balıkların üzerine yerleştirin.</p>
<p>Bir kap içerisinde krema ve 1 yumurta sarısını iyice karıştın ve mantarların üzerine dökün.</p>
<p>Önceden ısıtmış olduğunuz fırında 200 derecede 10 dk kadar pişirin.</p>

Somon balığı ile aynı familyadan olan alabalık tatlı su balığı olmasına rağmen oldukça lezzetli bir balıktır. <strong>Kılçığının az ve yumuşak olmasından dolayı kolayca ayıklanır bu sebeple çocukların yiyebilmesi için oldukça ideal bir balıktır.</strong> En önemlisi bol omega 3 kaynağı olması sebebiyle sağlıklı beslenme uzmanları tarafından da tavsiye edilir.</p>
<p>Anadolu mutfağında kızartma kültürü yaygın olduğundan alabalık genelde kızartılarak pişirilse de sağlıklı bir balık yemeği isteyenlerin en çok tercih ettiği fırında veya elektrikli ızgarada pişirmektir. Bu yazıda sizler için yağlı kağıtta biberiye ve limon ile hazırlanmış oldukça hoş kokulu ve lezzetli bir alabalık tarifi derledik. Beğeneceksiniz 🙂</p>

<h2>HAZIRLANIŞI:</h2>
<p>Balıkları yıkayıp iyice kurulayın. (Fazla sularından arındırmak için havlu kağıt kullanabilirsiniz.)</p>
<p>Balıkların içini ve dışını zeytinyağı ile iyice ovun.</p>
<p>Aynı şekilde içi ve dışına tuz ve karabiber serperek elinizle yedirin.</p>
<p>Balıkları yağlı kağıdın ortasına dizin ve içlerine limon dilimleri ve biberiye yerleştirin.</p>
<p>Yağlı kağıdın her tarafını kapatıp önceden ısıtmış olduğunuz fırında 200 derecede 25-30 dk kadar pişirin.</p>
<p>Bu süre balığın büyüklüğüne ve fırınınızın tipine bağlı olarak değişir. Alabalık hızlı pişen bir balıktır o yüzden çok uzun süre pişirip balığı kurutmayın.</p>

<p>Somon balığı ile aynı familyadan olmasından ötürü <strong>omega 3</strong> yağ asitleri bakımından oldukça zengin olan alabalık tatlı su balığıdır. Ancak yapısı gereği tuzlu suda da yaşayabilme özelliğine sahip olan olan bu lezzet soğuk suyu sever.</p>
<p>Yağ bakımından pek yağlı olmadığından dolayı genelde Anadolu mutfağında kızartması yapılan alabalık uygun şekilde marine edildiğinde ve pişirme süresine dikkat edildiğinde <strong>ızgara, fırın ve güveçte de oldukça lezzetli olur.</strong></p>

<p>Alabalığı nazikçe yıkadıktan sonra tüm suyunu süzün. İyice sudan arındırmak için havlu kağıt kullanabilirsiniz.</p>
<p>İçini ve dışını zeytinyağı ve yarım limon suyu ile elinizle iyice yedirin.</p>
<p>Bir kap içerisinde zeytinyağı, limon suyu, sarımsak, biberiye, tuz ve karabiber ile balıkları karıştırın.</p>
<p>Bu şekilde buzdolabında en azından 20-30 dk kadar bekletin ki tuz ve zeytinyağı balığın her yerine nüfuz ederek daha lezzetli olsun.</p>
<p>Alabalık çok yağlı bir balık olmadığından dolayı fazla pişirip kurutmamak gerekir. Biraz sulu kalması daha lezzetli olmasını sağlar.</p>
<p>Önceden ısıtmış olduğunuz ızgarada her bir yüzünü yaklaşık 5-6 dk kadar pişirmeniz yeterlidir. Eğer balık çok iriyse fazladan birkaç dakika daha pişirebilirsiniz.</p>
<p>Ayrıca bu süre kullandığınız ızgaranın türüne göre de değişiklik gösterebilir.</p>
<p>Pişirme sırasında sürekli çevirmeyin ki balık dağılmasın. Rengi opaklaşmaya başladığında piştiğini anlarsınız.</p>
<p>Eğer mangalda yapacaksanız köfte-balık ızgarası kullanarak iyice közlenmiş ateşte yavaş yavaş pişirmenizi tavsiye ederim. Mangalda bu pişirme süresi farklılık gösterir. Ateşin yoğunluğuna ve ızgaranın ateşe mesafesi bu süreyi etkiler.</p>
<p>Pişirme işleminden sonra henüz dumanı tüterken bir fırça yardımıyla üzerine tereyağı gezdirin.</p>
<p>Balığınızı keskin bir bıçak yardımı ile parçalayarak salata yanında servis edebilirsiniz.</p>
